Ethopia Anaerobic is an anaerobic-natural single-origin coffee from Ethiopia, cupping with honey, orange peel, and strawberry. Anaerobic processing seals ripe cherries in an oxygen-free tank before drying, letting a controlled population of yeast and bacteria ferment the fruit in ways a standard open-air natural process doesn't — the reason this cup reads riper and more intensely fruity than a conventional natural-processed Ethiopian coffee like our Ethiopia by DABOV.
We selected this lot for exactly that intensity. The honey and strawberry notes come from sugars and fermentation byproducts that build up inside the sealed tank before the cherries ever reach the drying beds, and the orange-peel note adds a citrus-pith bitterness that keeps the cup from tipping into pure sweetness.
Anaerobic processing is still a relatively recent technique in specialty coffee — barely a decade old as a mainstream practice — layered on top of Ethiopia's much older natural-processing tradition. The result is a coffee that carries Ethiopia's classic fruit-forward character but pushed further and made more concentrated by the fermentation step.
