DABOV Specialty Coffee is a chain of relationships we maintain. The chain begins on the farm and ends in your cup, and we are the connection between the two ends. That framing changes the work — we owe both sides full attention, and either failure (the producer's labour misrepresented, the customer's price not matched in quality) is unacceptable.

Scored 87+ by an international jury of cuppers, Cup of Excellence trophy lots are the engine of specialty coffee. Each year we buy two to four at the live auction and roast them in small batches.
Past wins on our shelves include 1st-place Brazil 2017 (Fazenda Paraíso, 93.26), 1st-place Mexico 2021 (Finca Santa Cruz), and a record 94.84-point Lot Santa Lucia from Honduras — the second-highest cupping score ever recorded at a CoE auction.

Jordan Dabov has served on the Cup of Excellence international jury since 2013, cupping competition lots in twelve producing countries — Brazil, Colombia, Costa Rica, Nicaragua, Honduras, Mexico, El Salvador, Guatemala, Peru, Ethiopia, Indonesia and Thailand. Every coffee in our catalog passes his cupping table first.

Specialty coffee — the top 5% of global production — exists because a few thousand families decide every year to chase the perfect lot instead of the easy harvest. Our catalog names them: Finca Doña Ileana in Costa Rica, Fazenda Paraíso in Brazil, the Niguse Gemeda Mude family in Ethiopia, Finca El Puente in Honduras, the Andrade brothers, Gabriela Hueck, Johan Falla. Eleven producing countries. Hundreds of named lots over the years.
We pay above-market — multiples of the C-market commodity price — because that's what an 86+ coffee actually costs to grow.

Specialty coffee is a fragile category — micro-climates that climate change is reshaping, smallholders whose margins barely justify the work, and shipping logistics that quietly burn energy.
For us, sustainability is the discipline of refusing shortcuts: hermetic GrainPro liners for green-coffee transit, sea freight by default (one fortieth the carbon intensity of air), small batches that minimise roasting shrink, and prices paid at multiples of commodity so producers can keep growing the work.
