Geisha earned its legend in Panama, but the variety's story starts in Ethiopia's wild coffee forests, from which it was collected in the twentieth century and passed through research stations into Central America. For decades it was an agronomic footnote — low-yielding, fragile, awkward to farm — until cuppers discovered that at the right elevation it produces a floral, tea-like cup unlike anything else in Arabica. Today it is the variety competition lots are made of.

Bringing it to Veracruz is characteristically ambitious for Ernesto Perez. His region — the humid, fog-wrapped eastern slopes of Mexico's Sierra Madre Oriental — is Mexico's historic coffee heartland, and his three Cup of Excellence wins are the strongest possible argument that its terroir can compete globally. Planting Geisha at Finca Fatima extends that argument: the cool, misty microclimate suits the variety's need for slow ripening and gentle stress.

The result is a microlot in the truest sense — a small, separately handled harvest, sold in 65 g sachets because there simply isn't much of it. Each box carries two.

Jasmine, Honeydew Melon, Sweet Orange, White Tea

The aromatics arrive before the first sip: jasmine, unmistakable and perfumed, the calling card of great Geisha. On the palate the cup is juicy and delicate at once — honeydew melon sweetness, a bright thread of sweet orange — with the silky, weightless body the variety is prized for.

Ratio: 1:16 to 1:17 by weight (20 g coffee to 330 g water).

Grind: Medium-fine.

Water: 198–205°F (92–96°C) — hot water lifts the florals.

Time: Around 2:45–3:15 for a V60.

Cupping-Style

For the fullest aromatic experience, brew it like a professional tasting: 12 g coffee to 200 g water, poured directly onto medium-coarse grounds in a bowl, crust broken at 4 minutes. No filter, no paper — just the coffee's complete aromatic picture.

Grind immediately before brewing and let the cup cool a little; jasmine and melon both open dramatically below scalding temperature.

The variety spent half a century in research plots valued mainly for disease resistance, its extraordinary cup unnoticed — because almost no one had grown it high and slow enough for the florals to emerge.
