Ethiopia Alo Mosto is an anaerobic-natural coffee grown at 2,400–2,500 meters in Bensa, Ethiopia, combining sealed fermentation with whole-cherry drying for a cup of butter biscuit, wild strawberry, and cacao liqueur. We buy this lot directly from farmer Tamiru Tadesse, whose plot sits in some of the highest terrain the Bensa area offers — elevation this extreme slows cherry development and concentrates the sugars that anaerobic-natural processing then pushes even further into the bean.

"Anaerobic-natural" means two techniques stacked together: the whole ripe cherry first ferments sealed inside an airtight tank rather than open air, then dries intact around the bean rather than being pulped first. That combination is what produces the biscuit-like sweetness and cacao-liqueur richness here — a heavier, more dessert-leaning cup than either technique alone typically gives.

A medium-light roast is the level that keeps this cup's fermentation-driven depth from tipping into roast char, while still letting the wild strawberry note read clearly rather than getting cooked down to jam. It's a lot for drinkers who already like natural-processed Ethiopian coffee and want to taste what a more deliberate fermentation adds on top — a good next lot to try alongside Ethiopia Bombe Alo, a classic natural from the same Alo area of Bensa, grown without the anaerobic step.
