Tamping is the last thing that happens to coffee before water hits it, and it's where human inconsistency sneaks into even well-run bars. A tired wrist tamps differently at hour six than at hour one; two baristas tamp differently from each other; and every variation shows up as channeling and sour-bitter shots. Automatic tamping removes that variable completely.

Does an automatic espresso tamper really improve shots?
