A short list, on purpose. Organic certification and 86+ point cup quality don't overlap as often as marketing suggests — plenty of certified coffee is unremarkable, and plenty of remarkable coffee is grown by smallholders who never pursue the paperwork. This category is reserved for the lots where the two genuinely meet.
Right now that means three coffees. Mexico Semi-Decaf Fatima Bio leads: an organically grown Mexican lot with roughly half the caffeine, ideal for drinkers cutting back without cutting out. In capsule format there's Guatemala Organic, a rounded single origin for Nespresso®-compatible machines, and Decaf Organic for a fully caffeine-free shot from the same convenient format.
Not inherently — soil, altitude, variety, and processing shape flavor far more than the certification stamp does. What organic growing does guarantee is how the farm works: no synthetic pesticides or fertilizers in the fields where the coffee cherry ripens. So we treat organic as a starting condition, not a selling point: every lot here still had to pass the same blind cupping as the rest of the catalog. If organic specialty coffee is a requirement for your kitchen, these are the ones we can pour with full confidence.
