Star Coffees Vol. 9 is a black honey–processed Gesha from Finca Lérida in Boquete, Panama, cupping with honey, jasmine, peach, and blackcurrant — the deepest, most fruit-concentrated honey-process expression DABOV has bottled from this estate. Black honey is the heaviest end of the honey-processing spectrum, leaving the most mucilage on the parchment during drying and pushing the cup closer to a natural in body and sweetness while keeping more floral clarity than a full natural typically shows.
This is the ninth release in DABOV's Star Coffees Collection, a numbered series of limited, collectible micro-lots — following earlier volumes drawn from Honduras, Nicaragua, and Ethiopia. It shares an estate with two other Finca Lérida Gesha lots in our catalog, Panama Lérida Geisha Honey (Lot 0562) and Panama Lérida Geisha Natural (Lot 0527), but represents the estate's black honey processing specifically — a third, distinct point on the same processing spectrum.
It's suited to a Gesha drinker who's already tried a washed or lighter honey-processed lot and wants to taste how far honey processing can push body and sweetness, or a collector working through DABOV's numbered Star Coffees releases.
