The diverse range of varieties, including Typica, Geisha, Garnica, and Marseillaise, makes this coffee exceptionally complex and unique.

Where does it come from?

This exceptional coffee comes from Finca Fátima, a family-owned farm in the foothills of Coatepec, Veracruz, Mexico. Spanning 15 hectares, the farm features protected water sources, endemic plant species, and lush forest ferns that contribute to its unique coffee-growing environment. Finca Fátima has won the prestigious Cup of Excellence multiple times, including its most recent recognition in 2021.

To fully appreciate the complex flavors of this coffee, we recommend brewing it using filter methods like V60 or Chemex. A coffee-to-water ratio of 1:16 with a water temperature of 92-96°C will enhance its delicate fruit and caramel notes.

Process: Carbonic Maceration Natural

The carbonic maceration natural process is an advanced fermentation method inspired by winemaking. Whole coffee cherries are placed in sealed tanks filled with carbon dioxide (CO₂), creating an oxygen-free environment. This anaerobic fermentation allows unique fruity and floral aromas to develop, resulting in a more intricate and refined cup.

Following fermentation, the cherries are slow-dried on raised beds for 15 to 30 days, ensuring a gradual and even moisture reduction. This careful drying process enhances the coffee’s sweetness and complexity, giving it an exquisite depth of flavor.

Typica & Other Varieties

Typica is one of the oldest and most respected coffee varieties, known for its clean and well-balanced profile. It offers delicate acidity, a smooth body, and refined floral and citrus notes.

At Finca Fátima, Typica is grown alongside Geisha, Garnica, and Marseillaise, adding depth to the flavor experience. Geisha is highly prized for its jasmine-like floral aroma and bright acidity, while Garnica and Marseillaise contribute sweetness, body, and subtle spice notes.
