Mexico La Perla is a super-light-roast, natural-processed Bourbon coffee grown at 1,800 meters in Veracruz, cupping with black cherry and rich chocolate. Veracruz is one of Mexico's oldest and highest coffee-growing regions, and 1,800 meters is well above the elevation most Mexican specialty coffee reaches — it's the altitude that gives this cup its density and the fruit-forward edge natural processing then builds on.
Most Mexican coffee sold internationally is washed, which produces the milder, cleaner profile the country is best known for. This lot takes the opposite approach: whole ripe cherries dry intact around the bean, letting the fruit's own sugars work into the coffee during a slow, sun-dried fermentation, which is why black cherry and chocolate come through so directly here instead of the tea-like cleanness a washed Mexican coffee usually shows.
A super-light roast preserves that fruit character rather than roasting it into a flatter, more generic sweetness.
