Why did we choose it?

Finca Ibonna represents the pinnacle of dedication, tradition, and innovation in coffee cultivation. The farm’s rich history began in 1988 when Ulrich Baltensberger moved from Switzerland to the Dominican Republic, determined to create a world-class coffee estate. He acquired 93 hectares of land in the Ocoa province, where Finca Ibonna was born. Today, his legacy continues with his son Samuel, daughter-in-law Ana, and their son Tiago, who passionately manage the farm. Over 25 skilled workers ensure the highest quality standards, from cultivating the crop to depulping, fermenting, washing, and drying the coffee beans.

Where does it come from?

Finca Ibonna is nestled on the slopes of Loma Alto de la Bandera at an average altitude of 1500 meters above sea level. This elevation, combined with the island’s tropical climate, high temperatures, and abundant rainfall, creates the perfect conditions for producing exceptional coffee. Hispaniola Island boasts a 300-year history of coffee cultivation, with small farmers playing a pivotal role in the industry since 1715. The fertile soil and unique microclimate impart a distinctive character to the coffee, making Finca Ibonna a standout in the specialty coffee world.

Best brew

Finca Ibonna is versatile and ideal for various brewing methods, including espresso, pour-over, and French press. As an espresso, it delivers a creamy, balanced flavor profile with pronounced chocolate and almond notes. A pour-over accentuates the delicate sweetness of nougat, while a French press reveals its full-bodied richness. Whether enjoyed black or with milk, this coffee promises an indulgent experience for every palate.
