Late Night Decaf is a Colombian specialty coffee decaffeinated using the Sugarcane EA (ethyl acetate) process, with brown sugar, peach, and red apple in the cup. Decaffeination strips caffeine out of green coffee before it's ever roasted, and the method matters: some processes lean on straightforward industrial solvents, while others, like the one used here, use a solvent naturally derived from a plant source rather than a purely synthetic one.
The Sugarcane EA method takes its name from ethyl acetate (EA) produced by fermenting sugarcane — the resulting compound is the same one that occurs naturally in the skins of some fruits, and it's used here to draw caffeine out of the green bean before roasting. That's a meaningfully different starting point from decaf methods built around synthetic industrial solvents, and it's one reason this process has become closely associated with Colombian decaf specifically, where sugarcane is a widely available agricultural input.
We grow this into a full-flavored cup on purpose — brown sugar sweetness, ripe peach, and a red apple brightness that decaf coffee doesn't always manage to hold onto once the caffeine (and, inevitably, some of the bean's other soluble compounds) is stripped out.
