Kopi Luwak is a 100% Arabica, medium-roast coffee from Sumatra, Indonesia, whose defining step happens before it ever reaches a roaster: the ripe cherries pass through the digestive system of the Asian palm civet before being collected, washed, and dried. It's one of the most talked-about coffees in the world for exactly that reason — the civet's digestive enzymes alter the bean's chemistry in a way no conventional processing method can replicate, producing a full-bodied cup of dark chocolate, cardamom, tobacco, and a smoked edge.
The variety is Typica, grown at 1,500 meters, and the medium roast is chosen to develop the tobacco and smoked notes fully without masking the cardamom spice underneath.
