Cocoa and Dark Red Fruits

Cocoa arrives first — not sweet milk chocolate but a deeper, more bitter dark-cocoa register — and a dark red fruit note (in the plum-and-dried-cherry family rather than bright citrus or berry) runs underneath it and surfaces most in the finish. On the SCA flavor wheel, that's cocoa on one branch and dried-fruit/other-fruit on another, deliberately kept apart rather than blended into a single flat note.

Body is medium, and acidity is present but restrained — enough to carry the dark red fruit note without pushing the cup toward the bright, high-acid territory of a washed light-roast single origin. Sweetness is moderate rather than dessert-like, which is the trade-off for keeping two distinct registers legible instead of smoothing them into one.

Medium-light is the load-bearing roast decision here: it's past the caramelization threshold needed for real cocoa depth, but short of the point where a darker roast's bittering compounds would overwhelm the dark fruit note.
