DABOV Signature Blend doesn't come from one farm, region, or altitude the way a single-origin lot does — as a blend, its flavor identity comes from the roast and combination decisions behind it. Its identity is defined by roast level (light) and flavor profile (mango, berries, chocolate, almonds) rather than by named origin components.

What sets this blend apart within our own catalog is its position: it's the only coffee we carry under The DABOV Signature, the line that puts the roastery's own name directly on the bag rather than a standalone blend name. That's a deliberate distinction from our other house blends — House Blend UNITY, House Blend Vertigo — which carry their own names within Balanced Blends rather than the DABOV name itself.

A light roast is also an unusual choice for a blend built for daily, repeatable brewing: most commercial house blends are roasted medium to dark because darker roasts mute lot-to-lot variation and produce a heavier, more forgiving body. Committing to a light roast on a blend is a bet that the underlying flavor profile is distinctive enough to carry a lighter touch — which is exactly what the mango and berry notes are doing here.

Mango, Berries, Chocolate, Almonds

This is an unusually layered cup for a house blend: mango and berries lead with genuine fruit brightness, chocolate fills out the middle for body and depth, and almonds carry a nutty, slightly sweet finish. On the SCA flavor wheel, that spread crosses from the fruity category (mango, berries) into cocoa and nutty — a wider range than most single-note house blends attempt, and part of why this one carries the DABOV name directly rather than a themed blend name.

The light roast is doing real work here. Roasting develops chocolate and nutty notes through Maillard browning and caramelization, but pushing a roast further also burns off the brighter fruit acids that read as mango and berry — so a darker roast on this same flavor target would likely lose the fruit character in favor of a heavier, more generically "chocolatey" cup. Staying light keeps all four notes present rather than letting the roast flatten them into one dominant register.

Body comes in full and creamy rather than thin, which is less common for a light roast — light-roast coffees are typically lighter-bodied — and it's what lets this blend work equally well black or with milk, despite leading with fruit rather than the caramel or nutty register milk drinks usually favor.

Espresso First, With a Light-Roast Adjustment

This blend works as espresso, but a light roast needs a different approach than a medium or dark one: light-roast beans are denser and resist extraction more, so pulling a good shot usually means grinding a touch finer and running the shot slightly longer than you would for a darker espresso blend.

Ratio: 1:2 (18g in, 36g out) as a starting point.

Grind: Fine — finer than you'd use for a medium or dark roast — adjusted until the shot runs closer to 30 seconds.

Water temperature: 200–203°F (93–95°C); light roasts generally extract better with water on the hotter end of the specialty-coffee range.

Drip or Pour-Over

A 1:16 ratio with a medium grind at 200–203°F (93–95°C) is where this blend's fruit notes show most clearly — filter methods let the mango and berry brightness come through without the concentration and body espresso adds.

Storage

Keep it whole-bean and grind only what you're brewing that session; light roasts hold their bright, volatile fruit aromatics for a shorter window once ground than a heavier dark roast would. Store the bag airtight, away from light and heat, and use a burr grinder if you can — a consistent grind matters more for a light roast pulled as espresso than it does for a forgiving dark roast.

By weight, the two roasts are roughly equivalent.
