Once Van Houten's 1828 cocoa press made defatted, easily dissolved cocoa powder possible, home drinking-chocolate mixes became practical in a way the older, oilier chocolate paste never was — and the packaged, ready-to-mix format most drinkers know today took off through the 20th century.
