Chinacla
Honduras Caballero is a washed, medium-light roast lot of Honduras coffee beans grown at 1,550 meters in the Chinacla highlands, with brown sugar, pear, and raspberry in a full-bodied cup. It's grown by Marysabel Caballero and Moisés Herrera, the same Chinacla family behind DABOV's Honduras Finca El Puente and Honduras Geisha lots — this is their washed Catuai, a different variety and process from either of those.
We selected this lot for the combination its full body and washed processing produce together: brown-sugar sweetness and a soft raspberry brightness sitting on top of unusually heavy, syrupy body for a washed coffee. Pear ties the two together in the middle of the cup, a fruit note that's neither as sharp as raspberry nor as roast-driven as brown sugar.
Chinacla, in the La Paz department, has built a reputation as one of Honduras's most consistent specialty-coffee growing areas, largely on the strength of farms like this one — smallholdings that have invested in careful processing rather than volume. At 1,550 meters, the altitude is high enough to slow cherry ripening and build the sugars that show up in this cup's sweetness.
