Ethiopia Karamo Anaerobic is a sealed-tank, anaerobically fermented coffee from the same 2,380-meter Sidama plot as our washed Karamo lot — a silkier, more concentrated cup of orange peel, honey, and strawberry. Rather than fermenting in open troughs or on raised beds exposed to air, this cherry sits in an airtight vessel before drying, a technique that changes which microbes do the fermenting and how far that fermentation goes before it's cut off.
We selected this lot to sit alongside — not replace — our washed Karamo coffee from the same farm, because the two together are a genuine before-and-after of what processing does to identical trees. Sealed fermentation builds more acidity, more perceived sweetness, and a rounder, almost syrupy body than open fermentation allows, which shows up here as strawberry and orange notes layered over a honeyed base rather than the cleaner stone-fruit profile its washed sibling carries.
A light roast keeps that fermentation-driven complexity intact without tipping into roast char.
