Ethiopia
Ethiopia by DABOV is a single-origin, natural-processed heirloom coffee with a cup profile of ripe berries, honey, and orange. Grown from Ethiopia's heirloom Arabica population — hundreds of native varieties that have never been isolated into single commercial cultivars — this lot carries a genetic diversity that shows up directly in the cup: layered fruit, floral top notes, and a natural sweetness no single-cultivar coffee quite replicates.
We selected this lot for its natural (dry) processing, which lets the coffee cherry ferment and dry intact around the bean. That extra contact time between fruit and seed is what pushes the cup toward berry and stone-fruit sweetness rather than the cleaner, tea-like brightness of a washed lot from the same origin. A medium-light roast keeps that fruit character forward without tipping into roast-driven bitterness.
Coffee itself is native to Ethiopia — every Arabica plant grown anywhere in the world today traces back to wild populations in the country's southwestern highland forests — so an Ethiopian heirloom lot is about as close as specialty coffee gets to drinking from the source. If you're new to Ethiopian coffee beans, this is a good on-ramp: intensely aromatic, brighter than a typical South American roast, and sweet enough to enjoy black.
