Colombia Banana Fermentation is an experimental, co-fermented coffee — Castillo-variety cherry fermented in a sealed tank alongside banana — that produces ripe banana, tropical fruit, and caramel in the cup. This is a coffee, not a flavored product: the banana is a fermentation ingredient, not an additive stirred in after roasting, and every flavor note in the cup develops from that fermentation process itself.
Co-fermentation seals coffee cherry inside an airtight tank together with a second ingredient — in this case ripe banana — so the sugars, yeasts, and enzymes from both interact during fermentation rather than the coffee fermenting alone. That interaction is what pushes this cup toward tropical sweetness and a juicy, almost fruit-forward texture well beyond what Colombian coffee typically shows.
We roast it light to keep that experimental fermentation character front and center rather than letting a darker roast smooth it into something more conventional. It's a coffee for drinkers who already know what a standard Colombian cup tastes like and want to see how far fermentation technique alone can push flavor — a genuine departure from our standard washed Colombia by DABOV, grown in the same country from an entirely different process philosophy.
