We selected this coffee for its washed processing, the method that dominates Colombian export production. Pulping the cherry and briefly fermenting off the remaining fruit before drying produces a cleaner, more consistent cup than natural processing typically does — a trade Colombia's coffee sector has leaned into for the better part of a century, prioritizing reliability over the wilder, more variable flavors natural-processed lots can produce.
