About the Coffee Specialty Coffee Mexico Fatima Bio, grown at Finca Fatima in Veracruz, stands out for its meticulous cultivation process. The coffee cherries ripen for about 8 months, carefully hand-picked before undergoing a specific drying process on raised beds, alternating between direct sunlight and shade for 15 to 30 days. This meticulous method results in a distinct combination of brown sugar, cherry, and apple notes.
Why We Chose It: Our coffee seeker, Jordan Dabov, was captivated by the unique processing method employed at Finca Fatima, leading to an exceptional taste profile. The combination of brown sugar, cherry, and apple notes showcased in this coffee impressed our selector, making it an exceptional choice.

Origin and Farmer’s Legacy Specialty Coffee Mexico Fatima Bio flourishes within the rich heritage of Ernesto Pérez Orrea’s family estate, the esteemed Finca Fatima. The lineage intertwines seamlessly with the vibrant tapestry of Mexican coffee history. It traces back to the late 19th century when Antonio Pérez Galván, Ernesto’s great-grandfather, became a coffee merchant for the Arbuckle brothers, leveraging his bilingual fluency in English and Spanish.
Antonio, with his daughter Genoveva, married into the Orrea family, co-founding Orea Machines during the 1950s. This visionary venture played a pivotal role in the industrialization of the Mexican coffee industry, an enduring legacy that still resonates today.
The acquisition of Finca Fatima in the 1970s marked a significant chapter. The estate transitioned through generations, inherited by Ernesto and his sister Livet. Ernesto’s sojourn to the USA sculpted his inspiration for specialty coffee, becoming a licensed Q Grader through the Coffee Quality Institute (CQI).
Returning to Veracruz with a newfound zeal for specialty coffee, Ernesto dedicated himself to the estate and its coffee processing. Within a mere year, Finca Fatima’s commitment and focus on specialty coffee cultivation and processing garnered acclaim, earning a distinguished position as a top 10 finalist at Mexico’s Cup of Excellence in 2019.
