COE Salvador #4 is a Cup of Excellence competition lot from El Salvador's 2025 harvest — an anaerobic-natural Pacamara grown by the Los Naranjos producer group in Apaneca-Ilamatepec, ranked fourth with a score of 88.8, cupping with honey, melon, vanilla, and grapefruit. El Salvador's 2025 Cup of Excellence split its entries into three tracks — traditional washed and honey lots, traditional naturals, and an experimental category for coffees processed with deliberate fermentation techniques like this one's sealed-tank anaerobic rest. A national jury cups every entry blind first, and only the coffees an international jury of buyers and Q graders confirms at 87 points or higher across both rounds earn a place in the winners' auction — this lot cleared that bar.
Pacamara itself is a large-bean hybrid bred specifically for cup quality rather than yield, and pairing it with anaerobic fermentation — sealed-tank rest before drying — pushes the flavor further from El Salvador's usual chocolate-and-caramel register toward the tropical, floral notes this lot carries.
