Where this category splits off is what happens next. Instead of drying the heat-fixed leaves right away the way green tea does, producers wrap the still-warm, slightly moist leaves in cloth or paper and let them rest in a covered, humid environment for a period ranging from a few hours to a few days, depending on the method used. This "sealed yellowing" (men huang in Chinese) allows a small amount of gentle, non-enzymatic browning to occur under controlled warmth and moisture — enough to soften green tea's grassier, more vegetal edges and shift both the leaf and the liquor toward a pale yellow-green color, but far short of full oxidation.
