What Is Mursal Tea?

Mursal tea — mursalski chai in Bulgarian — is the country's traditional mountain tea, made from the dried flowering tops of Sideritis scardica, a herb native to the Balkan mountains. It's a household staple across Bulgaria in the same way chamomile is a household staple elsewhere: an everyday infusion with a long domestic tradition, brewed at home for generations before it ever appeared on a retail shelf.

The cup is herbaceous and lightly sweet, often described as honey-toned, with none of the bitterness true tea can carry — closer in character to a hay-and-honey herbal infusion than to green or black tea. Naturally caffeine-free, since it contains no Camellia sinensis leaf at all.

"Mountain tea" is used across several Balkan countries for related but distinct plants — Greek mountain tea, for instance, generally refers to a different (though related) Sideritis species.
