Black Tea, Fully Oxidized

Black tea is defined by how completely it's oxidized before drying. Fresh-picked leaf is withered to soften it, then rolled or broken to rupture the leaf's cell walls — this exposes the leaf's natural enzymes to oxygen, and unlike green tea (where that reaction is halted almost immediately) or oolong (where it's stopped partway), black tea is left to oxidize essentially all the way through. That full oxidation is what turns the leaf from green to a dark coppery-brown and produces the deeper, more robust flavor black tea is known for compared to green or white tea from the same plant.

Two processing traditions produce that oxidized leaf: orthodox processing, where whole or lightly broken leaves are rolled and oxidized slowly, and CTC (crush-tear-curl) processing, which mechanically shreds the leaf into small, uniform granules that oxidize faster and brew a brisker, stronger cup more quickly — the style commonly used for tea-bag blends and spiced tea bases that need to stand up to added flavoring.

Once the base tea is fully oxidized and dried, spice character is layered on afterward — a warming, baking-spice profile blended into the finished black tea rather than grown into the leaf itself. That's a normal and long-established way to build a spiced black tea: the base does the oxidation work, and the added spice does the flavor work on top of it.

How to Brew Arabian Nights

Like most black tea, Arabian Nights wants hotter water and a longer steep than green or white tea to pull its full flavor without turning flat.

Start at 3 minutes and taste before extending the steep — black tea's tannins build quickly past the 5-minute mark and can turn a spiced blend bitter instead of warm. If you want a stronger cup without over-steeping, add slightly more leaf rather than steeping longer.
